Recipe of Spinach Lasagna with Goat Cheese

 

Spinach lasagna with goat cheese is a great vegetarian main course, and can be on the table in under an hour. A vegetarian pasta recipe that’s full of greens and super-tasty. Now this is a meatless dish but feel free to add in your desired protein between the layers.

Ingradients
 Lasagna sheets
 ½ kg fresh spinach
 2 tomatoes
 1 goat cheese
 Pesto sauce
 Bechamel sauce
 Grated cheese

Directions

In a large saucepan cook lasagna sheets according to package instructions.

Cook the spinach until tender.

Chop the goat cheese.

Peel the tomatoes and cut them into small cubes.

Once the spinach is cooked, put it in a bowl. Add the pesto sauce, goat cheese and tomatoes. Mix until well integrated.

To assemble the lasagne, add a bit of bachamel sauce on the bottom of greased baking dish. Make a layer of lasagna sheets. Add the next layer of spinach and goat cheese mixture. Make a layer of bechamel sauce, then lasagna sheets. Continue layering in this order.

Finish with bachamel sauce on top. Sprinkle with the grated cheese.

Place the lasagna into the preheated oven at 200º C for 30 minutes.

Serve, garnished with parsley, if desired.
